Ground Beef Stuffed Peppers

Here’s what you need:

2 bell peppers

1lb ground beef

1 tbsp taco seasoning

1 cup chopped mushrooms

1/2 red onion

1/2 cup refried beans

1/3 cup shredded cheddar cheese

Optional toppings: sour cream, avocado, chives, hot sauce!

Here’s how you make it:

In a frying pan, add chopped mushrooms, onion, ground beef and taco seasoning. Cook on medium heat for about 10 minutes or until your beef is fully cooked.

While the beef is cooking, cut your bell peppers in half and scoop out the seeds. Put the peppers on a baking sheet and drizzle with olive oil and bake in the oven for about 18-20 minutes at 400 degrees.

When the peppers are done, spread approximately 1 tbsp of refried beans on the bottom of each pepper. This will help the ground beef stick!

When the ground beef is cooked, fill up the peppers with the beef mixture and top with shredded cheese. Put the stuffed peppers back in the oven and broil for 1-2 minutes or until cheese has completely melted!!

Top with your favorite toppings such as sour cream, avocado, chives & hot sauce!
