Ground Beef Stuffed Peppers
These stuffed peppers are the perfect combo of savory, cheesy goodness with a little kick, making them an ideal weeknight meal!

In a frying pan, sauté chopped mushrooms, onion, ground beef, and taco seasoning on medium heat for about 10 minutes, or until the beef is cooked through.
While the beef cooks, slice the bell peppers in half and remove the seeds. Drizzle with olive oil and bake at 400°F for 18-20 minutes.
Once the peppers are done, spread about 1 tbsp of refried beans in each pepper to help the beef mixture stick.
Once the beef is cooked, stuff the peppers with the beef mixture and top with shredded cheddar cheese. Broil for 1-2 minutes, or until the cheese is melted.
Top with sour cream, avocado, chives, and hot sauce for the perfect finishing touch!
