Egg White Bites

A quick and easy breakfast idea! Great for meal prep too.

Here’s what you need:

8-12 egg whites (depending on how many you want to make)

Muffin tray

1/2 zucchini, thinly sliced

2 Green onions, chopped

Garlic powder, onion salt, and pepper to taste

2 tablespoons parmesan cheese

Here’s how you make it:

Lightly grease a muffin tin with olive oil spray

Add one egg white to each muffin cup

Then add in two/three thin slices of zucchini, a sprinkle of chopped green onion, and a little parmesan cheese

Finally, add lots of pepper, onion salt, and garlic powder and bake for 25 minutes at 400 degrees!

I like to eat mine with sliced avocado and hot sauce!


Side note: diced thin asparagus would be so good in these too:)
