2 cups brocoli diced
1/2 onion diced
1 1/2 cup carrots shredded
1 teaspoon sesame oil
1.5 cups water
1.5 cups coconut milk
2-3 cloves garlic
1 1/2 tablespoons peanut butter
1.5 tablespoons soy sauce
1 tablespoon sesame seeds
1/2 teaspoon red pepper flakes
1.5 cups noodles or like 6-8 oz noodles
Lets make Creamy coconut peanut stir fry noodles – vegan and took me 15 minutes and only using ONE pan so it’s quick with an easy clean up!
I sautéed brocoli, carrots and onion with a little garlic. Then I added some water and coconut milk, added the Thai noddles and covered. I added a scoop of peanut butter, soy sauce, red pepper flakes, sesame seeds, onion and garlic powder.
It’s SO good and as a non vegan option you can add chicken or eggs too!
