A great protein pick-me-up!!
What you will need:
-1 Cup of cooked and drained black beans
-1/2 cup of diced peppers
-1/2 cup of diced tomatoes
-Olive Oil
-Lemon
-Salt
-Pepper
-Optional: Avocado
Mix beans peppers and tomatoes.
In another small bowl mix olive oil, a few squeezes of lemon juice, and salt and pepper.
Combine and stir.
