For the Sweet Potato "Boat"
Preheat oven to 350°F. Pierce each sweet potato with a fork, then rub lightly with avocado oil and sprinkle with salt.
Bake sweet potatoes for 45 minutes, or until fork-tender. Let cool slightly.
Slice each potato lengthwise and gently scoop out a small amount of the inside (I like to save for mashed sweet potato meal prep).
Mix shredded chicken with BBQ sauce and stuff into each sweet potato.
Sprinkle with cheddar cheese and red onion slices.
Broil on high for 3–4 minutes, until cheese is bubbly and golden.
In a small bowl, mix sour cream with ranch seasoning. Dollop on top of each stuffed potato and garnish with sliced green onions.
