5 Veggie Packed Lasagna

5 Veggie Packed Lasagna

1 large zucchini

3 large carrots / 1 cup

1/2 yellow onion

3 cups spinach

4-5 cloves garlic

1 jar marinara pasta sauce (24 oz.)

1.5 cups ricotta

1 cup mozzarella

1/2 cup parm

appx 10-12 oz. ground turkey (a little less than a pack)

topped with additional 1/4 cup parm + 1/2 cup mozz

1 egg

Seasonings: salt and pepper to taste, garlic powder

The recipe:

Preheat your oven to 375 degrees and cook your lasagna noodles according to package.

While that cooks, combine your egg, mozzarella, parm, ricotta, garlic powder, salt and pepper in a bowl.

Prep your veggies by shredding your zucchini, peeling + dicing the carrots, garlic cloves, onion and washing your spinach.

Add your carrots, onion, garlic cloves, and zucchini to a skillet with a drizzle of olive oil. Add in your ground turkey, and season with salt pepper, and garlic powder. Sauté until the turkey is thoroughly cooked through!

Add in your spinach and stir in till slightly wilted. Mix in your jar of sauce to the pan and let cook till the sauce simmers.

Now you’re ready to layer your lasagna!

In a casserole dish / baking dish, layer your – meat sauce, noodles, ricotta mixture, meat sauce, noodles, ricotta, meat sauce, noodles, meat sauce and then top with cheese you had set aside!

Put the dish into the oven and bake for 30 min.

Top with flat leaf parsley and enjoy!!
