Made this for my fam tonight, and it was SO good—plus, all from Trader Joe’s! Quick, easy, and affordable. It served 5 of us and was a total hit. Highly recommend if you need a simple weeknight dinner!
The recipe:
Sauté the diced onion and corn in a little olive oil. Season with garlic powder, cumin, paprika, salt, and pepper. Cook until soft and fragrant.
Add the chicken broth, green chiles, white beans, and lime juice. Let it warm through.
Blend about 2-3 cups of the soup (before adding chicken) to make it creamy, then pour it back in.
Stir in the cream cheese until melted. Add the salsa verde pulled chicken and spinach. Let it cook until the spinach wilts and everything is heated through.
Optional but worth it: Let it simmer for an extra 10 minutes if you have time—it makes it even better!
Top with cheese, avocado, and tortilla chips. So easy, so good!
