Disclaimer: I am absurdly obsessed with French fries. And yes, these DEF satisfy my French fry craving.
Zucchini= good source of fiber, low cal, and a bunch vitamin C. I think this may be my favorite way of eating zucchini! They feel like a “cheat meal” but they are pretty healthy and easy to make! You can eat them as a snack, or side dish.
Serves 2
What you will need:
-2 large zucchinis
-1 tablespoon of Olive oil or avocado oil
-2 eggs
-3/4 cup panko breadcrumbs (these have less saturated fat than regular breadcrumbs, but use a brand that does not have partially hydrogenated oils)
-Salt and pepper
-Optional: organic all natural ketchup or other sauce you love with French fries:)
Directions!
Peel most skin off the two zucchinis, but leave a litttttle bit on because the skin actually has great antioxidants in it. Cut the zucchini into thin slices as pictured below. I cut mine into 6 pieces, aka a total of 12 “fries.”
Grab two bowls. In one bowl, put in one whole egg and one egg white (leave the yolk out of one of the eggs). Whip up these eggs. In the other bowl, put in the panko crumbs with a pinch of salt and pepper.
Turn the stove on medium heat, and put the olive oil evenly throughout the pan. While the oil is slowly heating up, dip each fry into the egg batter, then coat it in the panko crumbs bowl. The egg will make the panko stick to the zucchini. Try your best to get each little part of the zucchini pieces covered in panko crumbs
Put the zucchinis in the pan!
Wait until the side is a little golden brown, and then flip!
Cook until allllll parts of the zucchini is golden brown and the zucchini is cooked through!! So good:)
