Whenever I’m not feeling creative with dinner, this bowl is a go-to recipe we always have on rotation. It’s super versatile—mix and match your favorite toppings! This time, we went with a Mexican-style bowl featuring avocado and pico de gallo, but you could easily switch it up to a burger bowl with Thousand Island dressing, lettuce, and tomatoes, or even an Asian-inspired bowl with Japanese sweet potato. The sky’s the limit! Keep it delicious and simple, and you’ll find yourself coming back for more.
The recipe:
Preheat your oven to 425 degrees.
Wash, peel, and dice the sweet potato into even-sized pieces.
Place the diced sweet potato on a baking sheet. Drizzle with olive oil and season with garlic powder, sea salt, and chili powder. Toss to coat evenly.
Bake in the preheated oven for about 23-25 minutes, tossing halfway through to ensure even crisping.
While the sweet potato bakes, heat a skillet over medium heat. Add a splash of olive oil to prevent sticking.
Sauté the ground beef with your chosen seasonings (like @harmonyblends, sea salt, and chili powder) for 7-10 minutes or until fully cooked through. Sprinkle shredded cheese on top and cover with a lid (or microwave after plating) briefly to melt the cheese if desired.
Plate the baked sweet potato and top it with the ground beef. Finish with sliced avocado, a dollop of Greek yogurt, pico de gallo, red onion or green onion, and optional jalapeno!

Sooo simple, delicious, filling yet healthy, and ready in 30! This bowl makes 2: -10-12 ounces ground beef (i used taco seasoning) -1 sweet potato, diced and baked -1/3 cup cheese -1 avocado -2 tablespoons greek yogurt for a healthier sour cream taste -red onion or green onion and pico de gallo to your liking to top!
