This recipe is the perfect summer cookout appetizer – it perfectly encapsulates all those cheeseburger flavors in the perfect portable bite! Pair with thousand island or your fave burger condiments!
The recipe:
Prep your pickles and onions by dicing them into small pieces for the filling, the smaller the better.
In a skillet on medium heat, cook your ground beef with your seasonings til cooked through. Add your cheddar cheese and saute until melted.
Lay one egg roll wrapper on a work surface with one corner pointed toward you like a diamond.
Spoon approximately 2-3 tablespoons of your ground beef filling onto each egg roll wrapper. Add in your desired amount of diced pickles & red onion on top.
Fold the bottom corner up and over the filling. Fold the left and right corners toward the center. Push the egg roll away from you and roll it toward the top corner.
Optional: use the optional beaten egg/water to seal the edges of the wrappers as you go.
Pour 1/2 to 1 inch of avocado oil into a deep pot/skillet.
Fry 3-4 egg rolls at a time, turning occasionally, until browned all over, approximately 3-5 minutes.
Drain on paper towels, then serve with dipping sauce of your choice.

Mexican Coleslaw
This dish is so light and refreshing, but also packed FULL of flavor and nutrients! It works as the perfect lunch, side dish, topping, taco addition, you name it!
Optional: 1 tbsp agave (I didn’t do it but I like a tang)
Instructions
Prep your veggies by rinsing and patting dry (so the coleslaw doesn’t become soggy), dice your onion and finely chop your cilantro.
To make the dressing, in a separate bowl, combine your mayo, apple cider vinegar, squeezed lime, mustard along with your seasonings. Stir well to combine!
Mix your veggies in a bigger bowl (corn, diced red onion, black beans, coleslaw mix, and chopped cilantro), then add in your dressing. I like to do a little bit at a time so that you don’t drown the veggies in too much dressing! This lets you get the PERFECT ratio of dressing to veggies!
Use as a side dish, topping or whatever you’d like! Enjoy!! xx
