Brussel Sprout Salad

Brussel Sprout Salad

Ok- truth is, I’m not a big salad girl. I actually try to avoid eating salads because I’d rather eat SO many more things first hahah. But, this one I’d have to say is a fav.

So easy. So tasty. AND Boyfriend/brother/dad approved, too.

What you will need: (Serves 2-3)

2 cups Shaved raw brussel sprouts (I get mine from Trader Joes)

1/3 cup Parmesan cheese

8 Bacon strips

And for the dressing:

1/3 cup olive oil

Squeeze of lemon

1 teaspoon minced garlic

1 teaspoon red wine vinegar

Salt and pepper

Cook bacon.

Place raw brussels in salad bowl.

While the bacon is frying, it’s time to make the dressing!

In a separate bowl, put in all of the ingredients for the dressing and whip up with a fork for about¬†1 minute. (Like you’re scrambling eggs!)IMG_9235IMG_9238

Once bacon is cooked thoroughly, pat the oil off with a paper towel. Let it cool for a minute, and then make the bacon pieces into bacon bits!

Crumble them on the brussels.

Pour in dressing, and toss thoroughly. Mix in the parmesan. Top with a little added pepper.

Anddddd my bad, I finished it way too fast and truly forgot to take another picture of it. HAHA. This is a must try!:)
