Vegetarian Crispy Tacos

A quick, easy, and satisfying meal that’s packed with protein - proving vegetarian can be just as hearty and delicious!

Ingredients
  

  • 2 flour tortillas
  • 1/4 cup shredded cheddar cheese or vegan cheese
  • 1/2 lb vegan ground beef such as Beyond Meat or use regular ground beef or ground turkey, if preferred
  • 1/4 cup corn
  • 1/4 red onion diced
  • 1 tablespoon taco seasoning
  • Olive oil for cooking and brushing
  • Shredded lettuce for topping
  • Sour cream for topping
  • Optional: sliced avocado, hot sauce to top

Instructions
 

  • Heat a sauté pan over medium heat and add your protein of choice. Cook the vegan ground beef (or your preferred meat) for about 10 minutes until browned and cooked through.
  • Add the corn, diced red onion, and taco seasoning. Cook for an additional 3-4 minutes, until the veggies soften and the flavors meld.
  • Lay out the tortillas and sprinkle a little shredded cheese in the center of each.
  • Add the protein and veggie mixture on top of the cheese. Feel free to sprinkle a little more cheese over the filling if you like it extra cheesy.
  • Fold each tortilla in half to form a taco or quesadilla shape. Brush both sides lightly with olive oil.
  • Place the folded tortillas under the broiler for 1-2 minutes on each side, or until golden brown and crispy. Keep a close eye to avoid burning.
  • Remove from the oven and top with shredded lettuce and sour cream. Add sliced avocado and hot sauce if desired. Enjoy!! xx
