Toasted Kale Salad
I made an UNREAL kale salad and just had to share the recipe with you guys! Perfect for a cozy, nutrient-packed lunch or dinner.

Wash and de-stem the kale leaves, then finely chop. Massage the kale with olive oil using your hands until it’s soft and tender.
Toast the walnuts by chopping them into smaller pieces and lightly roasting them in a dry pan on medium heat for a few minutes, stirring frequently to avoid burning.
Add the toasted walnuts to the kale along with the shredded carrot, green onions, and chickpeas.
In a small pan, heat olive oil and add the crushed garlic. Stir in the breadcrumbs and toast until golden brown and crispy.
Add the toasted breadcrumbs and crumbled feta to the salad.
Whisk together olive oil, lemon juice, vinegar, salt, and pepper. Drizzle over the salad and toss to combine.
Optional: Top with sliced avocado and grilled chicken for extra protein! Enjoy!! xx
