Oatmeal Cranberry Orange Muffins

There is something about the smell of orange zest around the holidays that is just so incredibly festive and comforting!! These Oatmeal Cranberry Orange Muffins are the ultimate grab and go meal for those days that you don't have time to even think about breakfast and still want to eat something healthy (ish) that actually tastes good too!

Ingredients
  

Dry Ingredients:

  • 1 cup old-fashioned oats
  • ¾ cup flour
  • ½ cup sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • Zest of 1 orange

Wet Ingredients:

  • Juice of 1 orange approx. ⅓ cup
  • ½ cup almond milk
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp olive oil

Add-ins:

  • 1 cup chopped cranberries
  • ¼ cup chopped nuts optional

Instructions
 

  • Preheat oven to 350°F and line or grease a muffin tin.
  • Mix dry ingredients in a medium bowl.
  • In a separate bowl, whisk together the wet ingredients.
  • Combine wet and dry ingredients until just mixed — don’t over stir to keep muffins fluffy.
  • Fold in the cranberries and nuts, if using.
  • Fill each muffin cup about ¾ of the way full.
  • Bake for 18–20 minutes, or until muffins are golden and a toothpick comes out clean.
  • Let cool slightly before enjoying!
