Low Carb Lunch

I was trying to make a quick and healthy lunch in between meetings last week and I just threw a bunch of veggies and seasonings that I had at home in a pan and added it to a turkey burger for an extra protein kick! Came out SO good and it was seriously so easy to make!
Total Time 15 minutes
Course Main Course
Servings 1

Ingredients

  • 1 turkey burger store-bought or homemade
  • 1/2 zucchini sliced
  • 1/4 onion chopped
  • 1/4 cup corn
  • Chives chopped
  • A few shakes of garlic powder
  • A few shakes of onion powder
  • Cheesy Seasoning Blend (Trader Joe’s)
  • Lawry’s salt
  • Sprinkle of cheese
  • 1/2 avocado sliced

Instructions

  • Cook the turkey burger according to the package instructions (mine took about 5 minutes on each side, then I let it simmer on low for a couple more minutes to make sure it was fully cooked).
  • In a separate frying pan, sauté the zucchini, onion, corn, and chives with garlic powder, onion powder, Cheesy Seasoning Blend, and Lawry’s salt until veggies are tender and lightly golden.
  • Top the turkey burger with the sautéed veggies, sprinkle with cheese, and finish with sliced avocado.
  • Add extra red pepper flakes or hot sauce if you like some heat! Feel free to add more seasoning to taste.
