Leftover Charcuterie Salad
If you’ve ever had leftovers from a charcuterie board and weren’t sure what to do with them, this salad is for YOU! It’s quick, simple, and totally customizable.

Prepare the roasted tomatoes by sautéing them with a little garlic, salt, and olive oil over medium heat for 5 minutes until softened and flavorful.
In a large bowl, combine arugula, salami, roasted tomatoes, avocado, Parmesan, green onions, and black olives.
Drizzle with olive oil and fresh lemon juice. Season with salt and pepper.
Toss everything together until well combined.
