Leftover Charcuterie Salad

If you’ve ever had leftovers from a charcuterie board and weren’t sure what to do with them, this salad is for YOU! It’s quick, simple, and totally customizable.

Ingredients
  

  • Arugula or any salad base you have on hand
  • Salami sliced or chopped
  • Roasted tomatoes sautéed in garlic, salt, and olive oil over medium heat for about 5 minutes
  • Avocado sliced or diced
  • Diced Parmesan cheese
  • Green onions chopped
  • De-pitted black olives
  • Juice of 1 lemon
  • Olive oil
  • Salt and pepper to taste

Instructions
 

  • Prepare the roasted tomatoes by sautéing them with a little garlic, salt, and olive oil over medium heat for 5 minutes until softened and flavorful.
  • In a large bowl, combine arugula, salami, roasted tomatoes, avocado, Parmesan, green onions, and black olives.
  • Drizzle with olive oil and fresh lemon juice. Season with salt and pepper.
  • Toss everything together until well combined.
