Easy One-Pan Skillet Lasagna

Lasagna without the lasagna-making commitment! This easy one-pan skillet lasagna skillet requires no boiling noodles, no layering, and barely any cleanup. Just one skillet of cheesy, saucy goodness!

Ingredients
  

  • 16 oz ground turkey
  • 1 tbsp olive oil
  • ½ small onion finely diced
  • 2 zucchini thinly halved and sliced into ribbons
  • 3 garlic cloves minced
  • 1 tsp salt
  • 1 tsp pepper
  • 3 cups marinara sauce (or vodka sauce... SO good!)
  • ½ cup water
  • 4 oven-ready lasagna sheets broken into pieces
  • ½ cup ricotta
  • mozzarella to taste
  • parmesan to taste
  • handful of fresh basil

Instructions
 

  • Preheat oven to 400°F.
  • Heat olive oil in a large oven safe skillet over medium heat. Add the ground turkey and onion and cook until the turkey is browned and the onion begins to soften.
  • Stir in the zucchini and garlic, then season with salt and pepper. Cook for a few minutes until the zucchini starts to soften.
  • Pour in the marinara sauce and water, then stir in the broken lasagna sheets. Make sure the noodles are mostly covered by the sauce.
  • Dollop the ricotta evenly over the top and gently swirl it into the sauce.
  • Sprinkle with mozzarella and Parmesan, then transfer the skillet to the oven. Bake for 25 minutes, or until the noodles are tender and the cheese is melted and bubbly.
  • Top with fresh basil and serve straight from the skillet!
