Crispy Chicken Pesto Caesar Salad

This is SUCH an easy, healthy, and delicious meal that works perfectly for either lunch or dinner!

Servings 1 larger salad (or 2 smaller salads)

Ingredients
  

  • 1/2 cup shredded rotisserie chicken
  • 2 cups romaine lettuce chopped
  • 1/2 cup cherry tomatoes halved
  • 1/2 avocado diced
  • 2 green onions chopped
  • 1/4 cup croutons I love the plantain ones from Trader Joe’s
  • Handful of Parmesan cheese grated
  • 1/4 cup light Caesar dressing
  • 1 heaping tbsp pesto or more if you’re a pesto fan!
  • Olive oil
  • Salt pepper, and garlic powder to taste

Instructions
 

  • Heat a drizzle of olive oil in a pan over medium heat. Add shredded rotisserie chicken, season with salt, pepper, and garlic powder, and sauté until crispy.
  • While the chicken cooks, chop romaine lettuce, cherry tomatoes, avocado, and green onions.
  • In a large bowl, combine lettuce, tomatoes, avocado, green onions, croutons, and Parmesan cheese.
  • Add crispy chicken on top.
  • Drizzle with light Caesar dressing and pesto. Toss everything together until well mixed.
  • Adjust dressing to your taste. Enjoy! xx
