Crispy Chicken Caesar Couscous Bowl

Dinner couldn't get easier than this bowl! It's light, flavorful, and uses just a handful of ingredients!

Ingredients
  

  • 2 cups shredded chicken (I used rotisserie)
  • 3 cups romaine lettuce, finely chopped
  • 1/2 avocado, sliced
  • 1/4 cup green onion, finely chopped
  • 1/4 cup Caesar salad dressing
  • 1.5 cups couscous, uncooked
  • Seasonings: salt and pepper, to taste

Instructions
 

  • Cook the couscous according to the package instructions in a stockpot. Set aside.
  • Shred your chicken before adding to the skillet.
  • In a skillet over medium heat, sauté the cooked shredded chicken in a little olive oil with a dash of salt and pepper until heated through and crispy. Set aside.
  • Finely chop the romaine lettuce, green onion, and slice the avocado.
  • In each serving bowl, layer the couscous as the base. Arrange the crispy chicken, romaine lettuce, avocado slices, and green onion on top of the couscous.
  • Drizzle Caesar salad dressing over your assembled bowl! Enjoy! xx
