Crispy Beef & Corn Tacos

The healthiest, crispiest tacos that require absolutely no deep frying! Feel free to use your protein of choice!

Ingredients
  

  • 6 corn tortillas
  • 1 package ground beef, about 8-10 ounces
  • 2/3 cup corn
  • 1 cup Mexican cheese
  • 2/3 cup red onion, diced
  • 1/2 cup green chiles, diced

For the Sauce

  • 1/2 lime, to squeeze
  • 1/4 cup Greek yogurt
  • 1-2 teaspoon hot sauce of choice
  • Optional: 1/2 avocado to top
  • Seasonings: taco seasoning, garlic powder, salt and pepper

Instructions
 

  • Turn on your broil setting for your oven.
  • In a saute pan, add your ground beef and cook for about 10 minutes, then add in your taco seasoning, salt and pepper.
  • In another pan, heat your corn till charred, about 3-4 minutes, or until tender.
  • Put the tortillas covered with a little bit of olive oil on a baking tray, and add a little bit of your cooked ground beef to each tortilla.
  • Add your charred corn, red onion, green chillies, and cheese! Fold over and place in the oven.
  • Add to the oven for 2-3 minutes on each side to ensure that your tacos are nice and crispy!
  • While the tacos broil, combine your greek yogurt, hot sauce and lime.
  • Top with diced avocado and a dollop of your Greek yogurt mixture, and enjoy! xx
