Creamy White Beans

This recipe is the easiest vegetarian-friendly soup and is so creamy and delicious! So easy to make and packed full of flavor! Give it a try and let me know what you think! It's packed with protein and low-carb, perfect for your easy dinner or as a side!

Ingredients
  

  • 1 can white beans strained & rinsed
  • 3.5 cups broth of choice
  • 2.5 cups spinach, finely chopped
  • 1 tablespoon olive oil
  • Handful fresh basil, finely chopped
  • Seasonings: garlic powder, onion, powder, salt and pepper, to taste

Instructions
 

  • Prep your veggies by finely chopping your spinach and basil.
  • Strain and rinse your beans then add to a pot with your broth of choice, finely chopped spinach, finely chopped basil, olive oil, grated Parmesan, garlic powder, onion powder, salt, and pepper.
  • Simmer on low to medium heat for about 45 minutes.
  • Serve with a sprinkle of grated parmesan and extra finely chopped basil, and enjoy!! xx
