Creamy Corn Dip

This dip is one of my go to recipes! I love making it as an appetizer and serving it with chips OR as a side dish with any sort of Mexican main dish. Last week my family made taco bowls and I made this creamy corn dip as a side and we used it as a topping!

Ingredients
  

  • 1 bell pepper diced
  • 1/2 red onion diced
  • 1 cup corn drained
  • 1 tbsp olive oil
  • 1 tsp taco seasoning
  • 2 tbsp diced green chilis I used mild
  • 2 tbsp cream cheese
  • Splash of half & half
  • 1/2 cup shredded cheese divided
  • 1 –2 green onions chopped
  • 1 handful chopped cilantro
  • 1 jalapeño sliced

Instructions
 

  • Preheat oven to 400°F.
  • Heat olive oil in a frying pan over medium heat. Add diced bell pepper and red onion and cook until softened, about 5 minutes.
  • Add corn, taco seasoning, and diced green chilis to the pan. Cook for another 2–3 minutes.
  • Transfer the mixture to a baking dish. Add cream cheese, a splash of half & half, and about 1/4 cup of shredded cheese. Mix until combined.
  • Sprinkle the remaining shredded cheese evenly over the top.
  • Bake for about 10 minutes, or until the cheese on top is golden brown. Enjoy!! xx
  • Remove from the oven and top with green onions, cilantro, and jalapeño slices for an extra kick!
