Ingredients
  

  • 1 head cauliflower, diced & boiled
  • 5-6 pieces bacon, cooked
  • 1 cup onion, diced finely
  • 4 tablespoon butter
  • 3 cups broth (chicken or vegetable)
  • 3.5 cups broccoli, diced
  • 2/3 cup half & half
  • 2 cups shredded cheese
  • 1/4 teaspoon paprika
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/4 cup green onions, diced to garnish

Instructions
 

  • Boil the diced cauliflower for about 20 minutes or until soft. Drain the water.
  • Return the cauliflower to the pot, add the broth, and use a hand mixer to blend until smooth.
  • Stir in the diced broccoli and onion, then add garlic powder and butter. Cook on low heat for about 10 minutes, or until the broccoli is tender.
  • Lightly pulse the soup with the hand mixer or immersion blender to blend a bit of the broccoli but leave some chunks.
  • Stir in cheese, pepper, salt, paprika, half & half, and crumbled bacon. Simmer for an additional 15 minutes.
  • Top with green onions, extra bacon, and more cheese before serving. Enjoy!
