Ingredients
  

  • 1 head of cauliflower

For the Chimichurri

  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1/2 cup parsley
  • 3/4 cup green onion 
  • 3/4 cup cilantro
  • 2 tablespoon oregano
  • 2-4 cloves garlic (depending on size)
  • 1 teaspoon sea salt
  • 1/3 cup greek yogurt to mix in after

Instructions
 

  • Preheat your oven to 420°F.
  • Cut the cauliflower into 1-inch thick "steaks."
  • Arrange the slices on a baking sheet and drizzle with olive oil. Season generously with salt and pepper.
  • Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the cauliflower is crispy and browned on the edges.
  • In a blender or food processor, combine the chimichurri ingredients: fresh parsley, garlic, red wine vinegar, oregano, red pepper flakes, and a pinch of salt. Blend until well mixed, leaving it slightly chunky for added texture.
  • Stir in a few tablespoons of Greek yogurt for a creamy, zesty finish.
  • Place a cauliflower steak on a plate and generously top it with chimichurri sauce. Enjoy this delicious and healthy dish!
