Caesar Chicken Salad Bites

This recipe is the perfect "mini" meal or snack to make for a mid-day pick-me-up, girls' brunch, or luncheon. It's super simple and quick to make and super filling because of the protein!! Mixing cucumber with Caesar salad is honestly such a refreshing way to add in that crunch in a low carb way - the perfect bite every time!!

Ingredients
  

  • 1.5 cup shredded chicken breast or rotisserie chicken
  • 1/4 cup Caesar Salad Dressing of choice
  • 1 lemon wedge, to squeeze
  • 1 cucumber, sliced
  • 1/4 cup green onion, diced
  • 1/4 avocado, diced
  • Optional: breadcrumbs to mix
  • Seasonings: salt and pepper to taste

Instructions
 

  • Slice your cumber into thin rounds.
  • Shred your boiled or rotisserie chicken in a medium-sized bowl. Combine with your Caesar Salad dressing, salt, and pepper. Drizzle in a little olive oil to help thin out the dressing, and mix well.
  • Feel free to add in more salt and pepper to taste, along with your sliced green onions, and mix well.
  • Squeeze in your lemon to your preferred acidity levels and mix again!
  • Top your cucumber rounds with even scoops of the chicken mix, and top with a small piece of avocado!
  • Dust with a little more pepper and enjoy!! xx
