Buffalo Cauliflower + Sweet Potato Fries

OMG. My two favorite side dishes. This feels like you’re having a cheat meal, because it’s like wings with ranch, but it’s all SO HEALTHY. The perfect healthy side dish combo that gives you all the crispy, spicy, and creamy satisfaction of wings and ranch—without the guilt!

Ingredients
  

  • 1 large cauliflower head cut into florets
  • 2 large sweet potatoes peeled and cut into fries
  • 1 cup buffalo sauce you may not need the full amount
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/2 cup Greek yogurt for dipping

Instructions
 

  • Preheat your oven to 375°F. Peel the sweet potatoes and cut them into fries. Tear the cauliflower into bite-sized florets.
  • Place the sweet potato fries and cauliflower florets on a baking sheet. Drizzle with olive oil, and season with salt and pepper. Bake for 20-25 minutes, flipping halfway through, until crispy and golden.
  • While the veggies are baking, heat the buffalo sauce in a small saucepan over low heat for 2-3 minutes, just until warmed through.
  • Once the veggies are done, toss the cauliflower in the buffalo sauce. Serve the buffalo cauliflower with sweet potato fries on the side. Add a small dish of Greek yogurt for dipping.
