Broccoli MASH

This is a childhood FAVORITE. Even though this is how my mom made me eat veggies when I was little, still to this day this is how I like to eat my broccoli hahaha. This is a great side dish for any dinner or lunch!! It's also great for meal prep, and insanely easy to make.

Ingredients
  

  • 2 Cups broccoli florets
  • 1 tablespoon olive oil
  • 2 tablespoons cream
  • 1/4 cup cheddar cheese
  • Salt and pepper to taste

Instructions
 

  • Bring a medium pot of salted water to a boil. Add broccoli and cook until very tender, about 8–10 minutes. Drain well.
  • Return broccoli to the hot pot. Drizzle in olive oil and begin mashing with a potato masher or fork until you reach your desired consistency (smooth or a bit chunky).
  • Stir in the heavy cream and cheddar cheese. Continue mashing and mixing until the cheese is melted and everything is well combined.
  • Taste and season with salt and pepper. Serve hot alongside your favorite entrée or portion into containers for easy meal prep.
