4 Greens Microchop Salad

the key to loving raw veggies: the MICROCHOP 🔪 here’s a super simple salad I love to make when I’m needing multiple veggies at once!! after a weekend out and about, or traveling, I crave greens, yet still want something yummy, easy and filling💚

Ingredients
  

For the Dressing

  • 2/3 tablespoons mayo
  • 1 tablespoon olive oil
  • 1/2 tablespoon grainy mustard
  • 1/2 teaspoon apple cider vinegar or lemon juice
  • Salt & pepper, to taste

For the Salad

  • 1 cup kale, stemmed & finely chopped
  • 1/2 cup brussel sprouts, finely chopped
  • 1/2 cup broccoli, diced
  • 1/4 cup green onion, diced
  • 1/4 cup shredded cheese of choice

Instructions
 

  • In a small bowl, whisk together the mayo, olive oil, grainy mustard, and apple cider vinegar (or lemon juice).
  • Season with salt and pepper to taste. Adjust the seasoning as needed.
  • Finely chop all your veggies - the smaller the better!
  • In a large bowl, combine the chopped kale, Brussels sprouts, diced broccoli, and green onion.
  • Add the shredded cheese and mix well. Pour the dressing over the salad and toss until everything is well coated.
