Teriyaki Toasted Peanut Lettuce Cups

If you’re craving something savory with a little crunch, these lettuce cups hit the spot!! Loaded with savory teriyaki turkey, crunchy peanuts, and a little chili oil kick, I know you’ll love this easy meal just as much as I do!

Ingredients
  

  • 8 romaine lettuce leaves
  • 14-16 oz ground turkey
  • ½ cup carrots diced
  • ½ cup green onion diced
  • ½ cup no added sugar (or low sugar) teriyaki sauce
  • splash of water
  • 1 cup peanuts
  • chili oil (to taste)

Instructions
 

  • Place peanuts in an air fryer (my go-to!!) or oven at 400°F for about 3 minutes, until lightly toasted and fragrant. Set aside for later.
  • While peanuts are toasting, dice the carrots and green onion.
  • Heat a skillet over medium heat. Add the ground turkey, carrots, and green onion. Cook, breaking it apart with a spatula until browned and fully cooked.
  • Pour in the low sugar teriyaki sauce along with a small splash of water. Stir to coat the turkey mixture and let it simmer for 2–3 minutes until slightly thickened.
  • Lay out your romaine leaves and spoon the turkey meat evenly into each leaf.
  • Sprinkle toasted peanuts over each lettuce cup and drizzle with chili oil to taste.
