Servings 3 (we made 2 bowls, but definitely had enough for a leftover bowl!)

Ingredients

  • 1 large sweet potato, peeled and diced
  • 1 package ground turkey, appx. 10-12 oz.
  • 1 cup onion, diced
  • 2 cups packed spinach, finely chopped
  • 1 cup shredded cheddar cheese
  • 1 avocado, to top
  • 1/4 cup green onion, finely chopped
  • 1/4 cup cilantro, finely chopped
  • Seasonings: taco seasoning, garlic powder, onion powder, all seasons salt

Instructions

  • Preheat the oven to 425 degrees.
  • Wash, peel, and dice the sweet potato into even-sized pieces.
  • Place them on a baking sheet, drizzle with olive oil, and season with garlic powder, onion powder, and seasoned salt. Toss to coat evenly.
  • Bake in the oven for about 15-20 minutes, tossing halfway through to ensure even crisping.
  • While the sweet potato bakes, prepare the vegetables. Dice the onion, chop the spinach, green onion, and cilantro evenly.
  • In a skillet over medium heat, sauté the ground turkey with taco seasoning and a splash of olive oil to prevent sticking. Cook for 8-10 minutes or until fully cooked through.
  • Add the diced onion and chopped spinach to the skillet with the ground turkey. Mix well and cook until vegetables are tender and flavors are blended.
  • Once cooked to your liking, plate the mixture and sprinkle shredded cheddar cheese on top. Microwave briefly to melt the cheese.
