Ingredients
1large sweet potato,peeled and diced
1packageground turkey,appx. 10-12 oz.
1cuponion,diced
2cupspacked spinach,finely chopped
1cupshredded cheddar cheese
1avocado,to top
1/4cupgreen onion,finely chopped
1/4cupcilantro,finely chopped
Seasonings: taco seasoning, garlic powder, onion powder, all seasons salt
Instructions
Preheat the oven to 425 degrees.
Wash, peel, and dice the sweet potato into even-sized pieces.
Place them on a baking sheet, drizzle with olive oil, and season with garlic powder, onion powder, and seasoned salt. Toss to coat evenly.
Bake in the oven for about 15-20 minutes, tossing halfway through to ensure even crisping.
While the sweet potato bakes, prepare the vegetables. Dice the onion, chop the spinach, green onion, and cilantro evenly.
In a skillet over medium heat, sauté the ground turkey with taco seasoning and a splash of olive oil to prevent sticking. Cook for 8-10 minutes or until fully cooked through.
Add the diced onion and chopped spinach to the skillet with the ground turkey. Mix well and cook until vegetables are tender and flavors are blended.
Once cooked to your liking, plate the mixture and sprinkle shredded cheddar cheese on top. Microwave briefly to melt the cheese.
