Ingredients
  

For the Slow Cooker

  • 1 cup red salsa
  • 2 large chicken breasts about 1 pound total
  • 1 package taco seasoning 1 oz or 28 g
  • 3 cups chicken broth
  • ½ red onion diced

To Serve

  • Cooked rice optional
  • Olive oil
  • Chili powder
  • ½ cup shredded cheese cheddar or Mexican blend
  • Romaine lettuce chopped
  • 1 avocado diced
  • Greek Yogurt or Sour Cream
  • Extra diced red onion (optional

Instructions
 

  • Add salsa, chicken breasts, taco seasoning, chicken broth, and diced red onion to your slow cooker. Stir everything together to coat the chicken evenly with the seasoning.
  • Set the slow cooker to medium-high and cook for 4-6 hours. The chicken should be tender and easy to shred.
  • Use two forks to shred the chicken directly in the slow cooker. Let it sit for 10 minutes to soak up all the flavors.
  • Serve the shredded chicken over rice and drizzle olive oil and sprinkle with chili powder for added flavor.
  • Add shredded cheese, romaine lettuce, diced avocado, Greek yogurt/sour cream, and extra red onion if desired.
