Sesame Ginger Cucumber Salad

This cucumber salad with ginger and soy is the PERFECT summer side dish because it’s so refreshing, light and flavorful! Pair it with grilled chicken or salmon with some quinoa or brown rice and you’ve got an healthy and delicious summer meal!

Ingredients
  

  • 1 cucumber thinly sliced
  • ¼ red onion thinly sliced
  • 1 tbsp vinegar
  • Juice from ½ lime
  • 1 tsp agave
  • 1 tbsp soy sauce or coconut aminos
  • 1 tsp sesame oil
  • 1 tsp crushed ginger
  • 1 tsp sesame seeds

Instructions
 

  • Thinly slice the cucumber and red onion and place them in a bowl.
  • In a small bowl, whisk together the vinegar, lime juice, agave, soy sauce or coconut aminos, sesame oil, crushed ginger, and sesame seeds.
  • Pour the dressing over the sliced cucumber and onion.
  • Toss everything together until well coated.
  • Optional: Let the salad sit in the fridge for about an hour so the cucumbers can soak up all of the delicious flavors.
  • Enjoy as a refreshing summer side dish!
