Protein Packed Edamame Zucchini Fritters

I love my meatless Monday recipes - especially this one because it really pushed me to think outside the box to get my protein without "fake meat" or meat alternatives. I mixed up one of my favorite recipes, literally make zucchini fritters all the time, but this time added an ~edamame paste~ if you will. So yummy and so fun! And did you know that 1 cup of edamame has almost 20 grams of protein? Insane!!

Ingredients
  

  • 1 zucchini, shredded
  • 1 egg
  • 1 cup edamame
  • 1 dollop tzatziki to top
  • Seasonings: garlic powder, salt, pepper

Instructions
 

  • Prep your zucchini by shredding and set aside.
  • Add your egg, edamame, flour, garlic powder, salt and pepper to a blender and blend till there aren't any chunks!
  • In a bowl combine your shredded zucchini and "edamame paste" to create a batter. And in a skillet on medium heat, drizzle a little bit of olive oil and scoop in even portions of your batter and cook till golden brown, then flip.
  • Top with a little bit of tzatziki (and I like to add a little bit of salt) and enjoy!! xx
