Pesto Deviled Eggs

Don’t knock it till you try it! Decided to combine two of my favorite things today…PESTO and DEVLED EGGS! And you the end result was truly SO GOOD!

Servings 16 deviled eggs

Ingredients
  

  • 8 eggs
  • 1/4 cup mayo
  • 1 tablespoon relish
  • 1 tablespoon mustard
  • 1/4 cup pesto (or 2-3 tbsp)
  • 1/2 avocado, thinly sliced
  • 1/4 cup sun dried tomatoes, diced
  • 1/4 cup green onion, diced
  • Sprinkle of crumbled feta cheese
  • Salt and pepper to top

Instructions
 

  • First hard boil the eggs for 12 minutes and place them in ice water as soon as they are done to stop the cooking and cook them down
  • Then, cut each egg in half (lengthwise) and then scoop out the yolks and place them in a small mixing bowl.
  • Next, mix the egg yolks with mayo, relish and mustard until evenly combined.
  • Then add in the pesto and mix well!
  • Now it’s time to add in the pesto yolk mixture back into the egg whites.
  • Top each egg with a thin slice of avocado, sun dried tomatoes and a sprinkle of chopped green onion and feta. Top with salt and pepper, to taste! ENJOY!
