Meal Prepped Green Goddess Chicken Salad

A fresh and flavorful twist on classic chicken salad. Inspired by and hand-picked straight from my garden, this green goddess chicken salad is packed with vibrant herbs and perfect for easy meal-prep lunches!!

Ingredients
  

Chicken Salad:

  • 2 cups shredded chicken
  • 1 tbsp mayonnaise
  • 2 tbsp plain Greek yogurt
  • ½ tbsp Dijon mustard
  • 1 tbsp olive oil
  • juice of ½ lemon
  • handful of fresh basil
  • green onion to taste
  • parsley to taste
  • dill to taste
  • ½ cup finely diced spinach packed
  • salt to taste
  • pepper to taste

For Meal Prep (per jar – 32 oz mason jars)

  • chicken salad split evenly
  • 1 cup arugula
  • cup cucumber diced
  • ¼ cup walnuts
  • ¼ cup cheese (parmesan or feta)

Instructions
 

  • In a large bowl, add the shredded chicken, diced spinach, mayonnaise, Greek yogurt, Dijon mustard, olive oil, and lemon juice. Mix until the chicken is evenly coated and creamy.
  • Finely chop the basil, green onion, parsley, and dill, then add them to the bowl.
  • Stir everything together until fully combined. Season with salt and pepper to taste and mix again.
  • For meal prep, spoon the chicken salad into the bottom of mason jars. Layer with arugula, diced cucumber, walnuts, and cheese on top.
  • Enjoy your chicken salad right away with crackers, or seal and store in the fridge for an easy grab-and-go meal!
