High Protein & Fiber White Bean Chicken Salad

This creamy White Bean Chicken Salad is LOADED with protein, fiber, and fresh flavor. It’s perfect for lunch, light dinner, or meal prep and is SO easy to make!

Ingredients
  

  • 2 cups shredded rotisserie chicken
  • 1/4 cup red onion diced
  • 1 cup white beans drained and rinsed
  • 1 handful chopped spinach
  • 2 tbsp plain Greek yogurt
  • 1.5 tbsp mayonnaise
  • 1.5 tbsp dijon mustard
  • squeeze of lemon
  • garlic powder to taste
  • salt to taste
  • black pepper to taste

Instructions
 

  • In a large mixing bowl, add the shredded chicken, white beans, red onion and chopped spinach.
  • Add in the Greek yogurt, mayo, Dijon mustard, and a squeeze of lemon juice. Season with garlic powder, salt, and pepper to taste.
  • Gently mix until everything is well coated.
  • Serve a heaping spoonful on a toasted bagel with romaine lettuce, sliced avocado, and a dash of salt and pepper. You can also eat as a sandwich filling or as dip with crackers!
