Healthified Street Corn Salad

All the bold, creamy flavors of classic street corn, just a little lighter ;) With sweet corn, avocado, cilantro, and a bright lime sauce, it’s the PERFECT side for spring meals!

Ingredients
  

For the corn salad:

  • 2 cups white corn
  • handful fresh cilantro chopped
  • cup red onion finely diced
  • ½ cup cotija cheese
  • 1 avocado diced

For the creamy cilantro lime sauce (you will only use about half):

  • 1 cup cottage cheese
  • juice of 1 lime
  • 1 tsp salt
  • 1 tsp garlic powder
  • ½ cup packed cilantro or large handful
  • 1 tbsp olive oil

Instructions
 

  • Heat a skillet over medium heat and sauté the corn for 4-5 minutes until warm and slightly golden.
  • Remove from heat and let it cool until it’s no longer steaming, ideally to room temperature!
  • In a large bowl, combine the sautéed corn, diced red onion, chopped cilantro, cotija cheese, and diced avocado.
  • Time for the delicious sauce! In a blender, combine the cottage cheese (you can cut this in half, but it might blend better with 1 full cup!), lime juice, salt, garlic powder, cilantro, and olive oil. Blend until smooth and creamy.
  • Pour about half of the blended sauce into the bowl and gently toss everything together until evenly coated. (Save the rest of the sauce for a different recipe or dipping chicken or veggies in!)
  • Taste and adjust with extra lime, salt, or cilantro if needed.
