Green Chile Chicken Enchilada Bowl

One of my favorite comfort food recipes that is so healthy and full of flavor! It only takes 6 ingredients and because it's a slow cooker recipe - it's perfect for those busy days!

Equipment

  • Slow Cooker or Crockpot

Ingredients
  

  • 1-2 large chicken breasts (appx 1.2 lbs)
  • 1 jar green chile enchilada sauce (16 oz.)
  • 2 cups rice cooked
  • 1/2 cup red onion, diced
  • 1/4 cup cilantro, finely chopped
  • Seasonings: chili powder, onion powder, salt and pepper
  • Optional: cotija cheese + sour cream to top

Instructions
 

  • Add your chicken breast with an entire jar of green chile enchilada sauce, chili powder, and onion powder to a slow cooker. I cooked the chicken on high for 6 hours - but you can do whatever works for you!
  • During this time, I recommend cooking your rice during this time so that it's ready to assemble as soon as your chicken's done.
  • After your chicken is done cooking, shred and stir in your sauce to get all the yummy flavors captured.
  • To assemble your bowl, add your chicken to a bed of rice. Top with your diced red onion, avocado & cilantro! Feel free to drizzle in any extra sauce from your crock pot!
  • Optional: Top with cotija cheese & sour cream for those extra creamy flavors! Enjoy! xx
