Fuel for the Finish Protein Bites

Pregnancy had me craving sweets constantly, but these protein bites are the perfect solution. Packed with protein, iron-boosting pumpkin seeds (so important during pregnancy!), and dates that are great as you get closer to labor. A treat that actually fuels you!

Ingredients
  

  • 5 dates chopped
  • 1 cup oats
  • 2 scoops protein powder
  • cup pumpkin seeds
  • cup dark chocolate chips
  • ½ cup nut butter
  • tbsp honey

Instructions
 

  • De-pit and chop the dates into small pieces and set aside.
  • In a large bowl, combine the oats, protein powder, pumpkin seeds, dark chocolate chips, chopped dates, nut butter, and honey. Stir until a thick dough forms and all ingredients are evenly incorporated.
  • Using your hands or a cookie scoop, roll the mixture into bite-sized balls.
  • Place the bites in an airtight container and refrigerate for at least 30 minutes to firm up.
  • Keep stored in the fridge and grab one whenever you need a quick snack!
