Servings 12 crostinis

Ingredients

  • 1 small French baguette sliced
  • 2 cups ricotta cheese
  • 6 oz feta cheese
  • 2 tbsp olive oil
  • 1 tsp salt
  • about 10 figs sliced
  • honey for drizzling
  • olive oil for drizzling
  • flaky sea salt
  • fresh basil chopped or torn
  • crushed pistachios optional

Instructions

  • Preheat the oven to 400°F. Arrange the baguette slices on a baking sheet and toast for 8–10 minutes, until lightly golden and crisp. If you're only making a few crostinis, you can also use a toaster. For a larger batch, I definitely recommend using the oven!
  • While the bread is toasting, slice the fresh figs.
  • Add the ricotta, feta, olive oil, and salt to a blender or food processor. Blend until smooth and creamy.
  • Once cooled, spread a generous layer of the whipped ricotta and feta onto each toasted baguette slice. Top with sliced figs.
  • Drizzle with honey and a little olive oil, then finish with flaky sea salt and fresh basil. (Optional but would be great: crushed pistachios)
  • Serve immediately and enjoy!
