Chocolate Covered Yogurt & Fruit Bites

These Chocolate Covered Yogurt & Fruit Bites are a refreshing and satisfying frozen treat made with creamy yogurt, fresh fruit, and a crisp chocolate shell. They're perfect for a snack or healthier dessert, especially during the summer!

Ingredients
  

For blueberry honey

  • 1 cup yogurt
  • 1 1/2 tbsp honey
  • 2/3 cup blueberries

For strawberry nut butter

  • 1 cup yogurt
  • 2 tbsp nut butter of your choice
  • 1 cup strawberries diced

For the chocolate coating

  • 1 1/3 cup chocolate chips of your choice (milk or dark)
  • 1 tbsp coconut oil

Instructions
 

  • Line a baking sheet or tray with parchment paper or a silicone mat.
  • In a bowl, stir together 1 cup yogurt and 1½ tablespoons honey. Gently fold in the blueberries.
  • In another bowl, mix 1 cup yogurt with 2 tablespoons nut butter until smooth. Fold in the diced strawberries.
  • Use a small spoon or cookie scoop to drop bite-sized portions (about 1–2 tablespoons each) of the yogurt mixtures onto the lined tray. Keep the two flavors separate.
  • Place the tray in the freezer and freeze for 2–3 hours, or until the yogurt bites are completely solid.
  • In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 20–30 second intervals, stirring between each, until smooth and fully melted.
  • Remove the frozen yogurt bites from the freezer. Working quickly, dip each bite into the melted chocolate using a fork or spoon to coat, then place it back on the tray. (You can fully coat or drizzle if preferred.)
  • Return the tray to the freezer for another 15–30 minutes, or until the chocolate is set.
  • Enjoy straight from the freezer or store in an airtight container in the freezer for up to 2 weeks.
