Carrot Cake Muffins

Ingredients
  

For The Muffins:

  • 1 cup grated carrots about 2 medium
  • 1 cup oats
  • cup almond flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 1 egg large
  • cup maple syrup or honey
  • ¼ cup unswetended applesauce
  • ¼ cup Greek yogurt or skyr
  • 2 tbsp olive oil or melted coconut oil
  • 1 tsp vanilla extract
  • walnuts optional

Creamy Yogurt Frosting:

  • 3 tbsp cream cheese
  • cup Greek yogurt or skyr
  • tbsp maple syrup

Instructions
 

  • Preheat oven to 350°F and line or grease a muffin tin.
  • In a blender, add all of the ingredients except the grated carrots: egg, maple syrup (or honey), applesauce, Greek yogurt, olive oil, vanilla extract, oats, almond flour, baking powder, baking soda, cinnamon, and salt. Blend until smooth and combined.
  • Stir in the grated carrots.
  • Divide the batter evenly into the muffin tin, filling each about ¾ full. Sprinkle with walnuts and bake for 15–18 minutes, or until a toothpick comes out clean.
  • While the muffins are baking, let’s make the frosting! In a small bowl, mix together the cream cheese, Greek yogurt, and maple syrup until whipped and creamy.
  • Let the muffins cool completely before adding the frosting. Then spread or dollop on top.
  • Sprinkle with cinnamon and enjoy your delicious treat! 🥕
