Caramelized Banana Cream Pie Cheesecake Cups

Always have bananas sitting on your counter? Make these caramelized banana cream pie cheesecake cups! It's one of my favorite ways to turn ripe bananas into an easy dessert and is made with simple ingredients you'll actually feel good about!

Ingredients
  

Crust:

  • cups rolled oats
  • 8 large dates or 10 small to medium
  • ¼ cup coconut oil
  • cup hot water

Cheesecake Filling:

  • 2 cups vanilla or plain Greek yogurt
  • 2 tsp instant vanilla pudding mix

Caramelized Bananas:

  • 2 bananas sliced
  • 1 tbsp coconut oil
  • ½ tsp cinnamon
  • tbsp maple syrup

Instructions
 

  • Add the oats, dates, coconut oil, and hot water to a blender or food processor. Blend until a sticky, crumbly mixture forms.
  • In a bowl, mix together the Greek yogurt and vanilla pudding mix until smooth and creamy.
  • Heat a skillet over medium heat and add the coconut oil. Place the banana slices in a single layer, then drizzle with the maple syrup and sprinkle with cinnamon. Cook for about 2 minutes, carefully flip, and cook for 1 more minute until golden and caramelized. They cook quickly, so keep an eye on them!
  • Divide the oat crust between cups and gently press it down. Add a layer of the yogurt mixture, followed by caramelized bananas. Repeat with another layer of yogurt and finish with the remaining bananas and a sprinkle of cinnamon.
  • Transfer to the fridge or freezer and chill for 2–3 hours before serving.
  • Enjoy!
