BBQ Chicken Pizza with Flourless Sweet Potato Crust
This recipe absolutely blew me away! This recipe is a healthier spin on your normal BBQ chicken pizza that's gluten-free, keto friendly and less sugar! I promise it's soooo good!

Preheat your oven to 425 degrees.
You can either cook your sweet potato in the oven or in the microwave. I personally used to microwave for ease and quickness.Oven method: Use a fork to poke holes into the sweet potato, place it on a baking sheet, and roast for 30-45 minutes until tender, flipping halfway through.Microwave Method: Use a fork to poke holes into the sweet potato, place it on a microwave-safe plate, and microwave for 5-7 minutes until tender, flipping halfway through. Allow the cooked sweet potato to cool before handling.
Once cooled, scoop out about 1.5 cups of sweet potato into a mixing bowl to make the crust.
In the mixing bowl with the sweet potato, add shredded cheese, egg, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mash together until well combined.
Spread the dough mixture evenly on a pre-greased baking sheet or parchment paper.
Bake the crust in the oven for about 15 minutes, until the crust has solidified.
While the crust bakes, prepare your toppings by shredding the chicken and finely chopping the red onion and cilantro.
Once you feel your crust is sturdy enough, it's time to layer and build your pizza!
Spread pizza sauce or marinara over the crust. Layer with shredded mozzarella and Italian mix cheese.
Toss the shredded chicken in a bowl to coat evenly.
Spread the BBQ chicken on top, followed by the red onion and a sprinkle of oregano or Italian seasoning.
Place the pizza back in the oven and bake for another 5-7 minutes, until the cheese is melted and the red onions are cooked to your liking.
Garnish with sea salt, olive oil, and cilantro, then enjoy! xx
