Banana Mini Muffins

Don’t know what to do with one leftover banana that’s about to go bad? I got you!! These banana mini muffins are so delicious, easy to make, and perfect as breakfast or a snack!

Ingredients
  

For The Muffins

  • 1 banana ripe
  • 1 egg
  • 1.5 tbsp butter melted
  • 2 tbsp maple syrup or honey
  • 1/2 tsp vanilla
  • 2/3 cup rolled oats
  • 1/4 cup milk any kind
  • 1/4 tsp baking soda
  • Pinch of cinnamon
  • Pinch of salt

For The UNHEALTHY Icing ;) 

  • 1 cup powdered sugar
  • 1 tbsp butter softened
  • 1/2 tsp vanilla extract
  • 1-2 tsp milk your choice

Instructions
 

  • Preheat the oven to 375 degrees.
  • In a blender, combine the banana, egg, melted butter, maple syrup (or honey!), vanilla extract, rolled oats, milk, baking soda, cinnamon, + salt. Blend until smooth.
  • Grease the muffin pan to prevent it from sticking or line with mini muffin papers. Then, carefully pour the batter into the pan, filling each cup until about 3/4 full.
  • Bake for 12 minutes (if they’re mini sized) or until a toothpick comes out clean.
  • While the muffins are in the oven, make the unhealthy icing ;) you can skip this part too!! Add powder sugar, softened butter, vanilla extract, and milk to a bowl and whisk until smooth.
  • Let muffins cool in the pan for 5 minutes. Transfer to a rack to cool completely.
  • Then, drizzle the icing on top of the muffins and enjoy!!
