Healthified Onion Rings

I had onion rings in Nashville for the first time in FOREVER (I’m a side of fries girl, always) but forgot how much I LOVED them. So, here is a healthier version paired with a SUPER easy yummy 3 ingredient tahini yogurt ranch!! And the best part is NO DEEP FRYING - a guilt-free option for you and a much easier cleanup!

Ingredients
  

For the Onion Rings

  • 1-2 medium yellow onion, sliced
  • 2 eggs
  • 1/2 cup panko breadcrumbs
  • 1/2 cup flour of choice
  • 2 tablespoons nutritional yeast
  • Seasonings: garlic powder, salt & pepper

For Tahini Dip

  • 1 tablespoon tahini
  • 3 tablespoons Greek yogurt
  • Splash of water
  • Seasonings: ranch seasoning powder, to taste
  • Optional: green onions, to top

Instructions
 

  • Preheat the oven to 375 degrees.
  • Peel and slice your onions into even sized rings to help them all cook evenly in the oven.
  • In a bowl, mix together your panko, flour, nutritional yeast, garlic powder, salt, and pepper.
  • In another bowl, crack your two eggs and beat.
  • Dip each ring in your egg then your panko mixture and set on the pan.
  • Coat your baking pan with olive oil to prevent sticking and allow those onion rings to really crisp up!
  • Place in the oven and bake at 375 for 20 minutes, flipping halfway through at 10 minutes.
  • While your onion rings bake, make your tahini dipping sauce! Mix together your tahini, greek yogurt, water, and ranch seasoning to taste.
  • Once your onion rings are done, pull them out of the oven, and enjoy!! xx
