Here is a quick and easy meal that you can whip up any day of the week with any leftover veggies that you have in your fridge that you need to use up! Perfect for a quick, hearty and healthy meal!
Here is what you will need:
1 zucchini, sliced
1 small package of mushrooms, sliced
1/2 red onion, sliced
1/2 green pepper sliced
5 oz light cream cheese
Salt and pepper to tast
1/2 package of spaghetti
1 lb of ground turkey
First you will slice up all of your vegetables and spread them out on a baking sheet! Then add olive oil and salt and pepper! Next, add dollops of your cream cheese throughout the pan. It’s ok if they are in big chunks, they will brown and be soooo flavorful, trust me!
Put your baking sheet in the oven at 400 degrees for 20-25 minutes!
While your veggies are in the oven, boil your pasta according to the package and brown the ground turkey in a sauté pan!
When the veggies are done, take them out of the oven and add them to your pasta and ground turkey mix! Top with parmesan cheese and enjoy!!
