VEGAN Creamy Cauli + Spinach Soup

HI!! Today, it’s bad weather outside, and I am also a little under-the-weather. I really wanted to make something creamy, warm, and fuzzy, but filled with VEGGIES! So I made up this cauliflower- spinach – potato soup recipe! Hope you enjoy!

WHAT YOU NEED:

2 potatoes

3 cups Spinach

1 small clove garlic

1/2  shallot, finely chopped

1 head of cauliflower (or around 3 cups cauliflower)

1 cup almond milk

3-4 tablespoons olive oil

Salt and pepper

 

WHAT TO DO:

First, set oven to 400. Chop up cauliflower, toss in 1 tablespoon olive oil, salt and pepper. 

Roast cauliflower for 20 minutes. 

Boil spinach. Only needs a couple min!

Microwave potatoes for 8-10 minutes each. 

Grab a blender, and toss in the roasted cauliflower, cooked spinach, and baked potato. Throw in the garlic and shallot, almond milk, and a little bit of water. + salt and pepper!!!

 

BLEND!!!

Then re-heat on stove top. I added in a little spinach to the blend, too! And top with olive oil!!:)
