Vegan Cauliflower “Ceviche”

I don’t think I’ve ever admitted this to yall… but I don’t eat raw fish!! I KNOW I can’t be the only one hahaha. So when everyone orders ceviche to the table, I never have any:( I was out to dinner with my boyfriend the other night, and there was VEGAN ceviche on the menu, so I just had to try a vegan version out myself!

Here is what you will need:

½ a head of cauliflower

½ cucumber

1 avocado

½ cup tomatoes

¼ red onion

¼ cup cilantro

1 Lime

2 tbsp. olive oil

Salt, pepper to taste

 

Chop one half of a cauliflower head into small pieces and place in a pot of boiling water and cook until fork tender for about 5 minutes

 

While your cauliflower is cooking, chop up 1 avocado, ½ cucumber, ½ cup of tomatoes, and a handful cilantro leaves.

 

When your cauliflower is done cooking, drain and cover in ice cold water, and add some ice cubes to stop it from cooking!

 

 

Put in a bowl and add all of your chopped vegetables! Then add the juice from one whole lime and 2 tablespoons of olive oil. Then add salt and pepper to taste and mix everything together until everything is well coated!

 

Serve cold with tortilla chips!
