Sesame Ginger Cucumber Salad

This cucumber salad with ginger and soy is the PERFECT summer side dish because it’s so refreshing, light and flavorful! Pair it with grilled chicken or salmon with some quinoa or brown rice and you’ve got an healthy and delicious summer meal!

Here is what you will need to serve 2:

1 cucumber sliced

¼ red onion, thinly sliced

1 tbsp vinegar

Juice from ½ lime

1 tsp agave

1 tbsp soy sauce or coconut aminos

1 tsp sesame oil

1 tsp crushed ginger

1 tsp sesame seeds

Thinly slice cucumbers and red onion and place in a bowl!

 

Then add the rest of the ingredients and mix it all together!

 

I love to let mine sit for an hour or so in the fridge so that the cucumbers have time to marinate and soak up all of those delicious flavors! This is the PERFECT summer side dish because it’s so refreshing, light and flavorful! Hope you enjoy as much as I do!
